Delete page grayed out along with other features in Acrobat XI PDF.

i designed pdf form in acrobat xi keeps track of professional development on 5 year period. each year supervisor signs digital signature. after signed first time noticed lot of features grayed out such delete page, extract page, insert page , rotate page. need add pages document can attach evidence of professional development each year. when complete course or workshop insert certificate of completion @ end of pdf. want delete few older pages. how can regain these features still work signatures?

when document digitally signed, acrobat no longer allows types of modifications. such modifications invalidate digital signature, making meaningless. can add signed pdfs others file attachments though.
