Fill and Sign - can't fill....

i downloaded fillable pdf desktop.  used fill , sign feature fill in , sign it, resaved filled form desktop.  now, need go in , change 1 of filled in fields.  click on fill , sign, nothing appears on toolbar, except sign icon.  won't let me change of filled in fields. perhaps i'm using wrong...  wanted save filled in form continued use, i'll need change 1 particular field.  don't want have fill of fields out every time, when 1 changes. 

you have completed form , locked values when signed form.
